When life gives you lemons

Four lemons left from the harvest of my little lemon tree. I saw the box of gingerbread cake at the store so a light bulb went off in my head that I could use the lemons.

I can make lemon curd to go with the gingerbread. I found a recipe for lemon curd online that was not too complicated so this weekend I will be baking.

Sort of an emergency blip as I spent the last of the daylight hours talking with Diane in Wisconsin. So great to have a chat and catch up!
