Jerusalem artichokes

These root vegetables are related to sunflowers and the Italian settlers in America, when they discovered them, used the Italian name girasole  which corrupted to Jerusalem.
They have a pleasant taste and are delicious in soup and roasted. I hope someone fancies them.
I am creating a raised bed where they grow so trying to dig them all out, very difficult to eradicate!
