Sancocho

Sancocho, fried plantains, rice, and grouper ceviche with passion fruit.

Sancocho is a Dominican stew. I'm not previously familiar with it, so I do not know what ingredients are standard or essential, but this one had chicken, corn, potatoes, plantains, and dumplings. It was very nice. The star of lunch today, though, was the grouper ceviche. We have eaten extremely well today which bodes well for the week to come.

Today we arrived in Punta Cana in the Dominican Republic. A little over a week ago my husband found out he was getting a surprise week off for reasons related to IT preparations for the post-covid return to office which is finally about to take place. We found a great last minute deal for Club Med and decided to do it. This is, by far, our most spontaneous and short notice trip (trumping our first weekend visit to Palm Springs, which is in driving distance). One advantage of being an underemployed adjunct professor with only one online, asynchronous class at the moment is that it was not too hard to prepare for a week away during the semester.
