Elderflower

Today's the day ............... to pick

Will's been out picking elderflower heads today so that he can start the process of making his elderflower wine.  He uses the dried flowers, so the first thing he does is to lay out all the heads on trays - to dry in the sunshine.  This is the perfect weather for it.

The above is from one of the cultivated varieties of elder that we have in the garden.  It has very dark leaves and the flowers are tinged with pink - but I daresay there would be nothing to stop you making elderflower wine from it?  Perhaps it would be more of a rosé  than the usual gorgeous pale honey-colour.

And if this year's vintage turns out even half as good as the 2022, we'll be very pleased .......................!
