Coffee and Walnut sponge cakes

It’s that time of year again when my friend opens her garden to the public to raise money for various cancer charities, under the umbrella of the National Gardens Scheme. We normally have between 160-200 visitors and most of them have tea so there are lots of cakes to be made. The Victoria sandwiches have yet to be finished!! We normally have 200 portions of cake available, as, in the past we have run out. It’s a fun afternoon and people love visiting the gardens.
