Sponge
I am having a practice making the top tier of a wedding cake. My friend wants one of the ‘semi naked’ cakes now very trendy for her daughter’s wedding. They are sponges, deeply filled with icing but with just a light coating on the outside so the sponge shows through. I haven’t done one of these before so I’m going to have a dry run and invite her over to see if it’s ok!
This is a six inch sponge and extra deep so it can be sliced into three layers. I used some foil backed parchment to line the tin to allow it to rise high and not overcook. It looks ok, tomorrow I will cut and decorate it!
