Elk

Marinated and seared elk on a salad with mustard vinaigrette, and Cowgirl Creamery Red Hawk cheese.

The elk was originally going to be part of last night's dinner, but we didn't have enough appetite. It made an excellent centerpiece to tonight's meal.
