Turkish "cig kofte" always makes it onto my "top 5" of things I love here (others including moving traffic figures, simits, and the call to prayer, not necessarily in that order)... Today at brunch with friends we thought about making it with quinoa instead of bulgur to make it gluten-free. A new take on a classic recipe was worth an immediate trial for Cengiz, who seemed to have the ingredients out about five seconds before we even mentioned the idea!

A great brunch with one of my favorite couples who always leave me thinking... 1) How long would I sit and think about "making gluten-free cig kofte" instead of just doing it? So much more adventurous to seize the moment when the idea is fresh and exciting.. 2) How many things things in my life could "making gluten free cig kofte" be a symbol for?! 3) Sometimes an old, classic recipe that doesn't really need changing might still be worth trying something new to. You never know.
