Cilantro Pesto Chicken

Cilantro pesto chicken and quinoa, cucumbers, Kansas City Pink beans with bacon, and Caesar roasted cauliflower. Wine: the rest of last night's Rosso di Montalcino.

I improvised the chicken, because I had a large bunch of cilantro to go threw. The beans were delicious and are likely to appear as a side again here this week. The cauliflower was based on a strange sounding but intriguing recipe (it is cauliflower marinated and roasted with an eggless Caesar dressing). Alas, intriguing as it sounded, we dubbed it unpalatable.
