Sunday Sourdough

I was very lucky to spend the afternoon in the kitchen at The Pompadour Restaurant at what is now called the Waldorf Astoria, but what everyone in Edinburgh knows as the Caley

I took advantage of the occasion to quiz the Patissier about proving the sour dough. Thanks to his tips, although smaller, this bread didn't collapse as soon as I turned it out of the basket. Tastes good too!
