The Parsnip That Wouldn't Die

Until I chopped it into tiny pieces...

Making soup today - the weather demands a hearty and warming soup - this is a mix of onions, carrots and a very feisty parsnip.  2 types of lentils have been added to the veggie stock and I'm looking forward to seeing how it tastes in a couple of hours.

It was not a day for going out - it has rained or greyed for the whole day.  Soup, toast, and then bed are my plans for today.
