Add beaten egg whites…
Today I made our Christmas cake. Mum’s trusty Kenwood, bought in 1977 is dusted off, and works hard for me. The cake recipe was originally for my Mothers 70th birthday - 41 years ago. It has 12 egg yokes, and 12 egg whites in it. This photo is the last step of the egg whites being beaten up before being folded into the fruit mixture, which has been soaking in whisky for more than 24 hours. It sits overnight, then is baked for 6 hours tomorrow. Hope it works out!
