A good bake

This week’s bread turned out very well. It may well have been a happy accident as the dough was proving for an additional three hours as I forgot about it and the second prove in the fridge also had to be extended by three hours as I was out shopping in the morning. I have found that the sourdough flavours become more enhanced the slower the rise. When I got back, my two table tennis friends arrived for a practice session. I am lucky having two ex champions to practice with. C. was Belgian veteran number one.
