100 THINGS TO DO WITH KALE: NO 2
Lemon and ginger chicken
I was actually so absorbed in photographing the kale that I forgot to put it in the dish, but here is how it should have gone:
Marinade slivers of chicken in lemon juice, diced fresh ginger and slliced shallots
Roll chicken etc in a little cornflour
Stir fry for a few moments in a little extra virgin
Add some coconut milk, any remaining marinade and grated carrot and steam until the liquid is almost evaporated
Toss in the finely chopped kale a few moments before serving with some corn on the cob.
Through the mist and smirr to Kirky this afternoon. There I met with three lovely women I have had the priviledge of working with recently. They offered me chocolate and I reluctantly refused. It's hard to stuff your face when you are being watched by six beady eyes belonging to women who have given up chocolate for Lent.
