Victoria Sponge

Not just any ordinary Victoria Sponge: a lemon one, with a lemon mascrapone filling. I drew the line at making my own strawberry puree and used raspberry jam instead. Life is too short! I am a little disappointed at how thin the cakes are - poor show Delia! I'll just make double quantities next time and jiggle the cooking time. What a gorgeous day today - three loads of washing basking in the sun this afternoon. Hopefully I can spend the rest of the afternoon with the boys in the sun.
