Because they are........?
Actually, the lower hole is in a stone that was (we think) previously a door frame.  It has the gap to receive the bolt.  The smaller stone above it was found exactly like that in the pile of stones we have been working through for the wall.  It was possibly a weight for a loom as its sides are well worn and is unlikely to have been naturally triangular with a hole in the middle.  That would age it at over 100 years old in this part of France, so fun to find.
We also found a shaped/carved bit of stone that would have been part of a door surround (a bit like a routed wood picture frame).
The wall (phase one) is finished now.  Mrs SoL (aka Frenchtoast) has blipped a wider view of the wall and me next to it, so will not steal her thunder by posting it as well.
