tonight we will be having a hearty stew.

1 thinly sliced onion
1 thickly sliced green pepper
2 thickly sliced red peppers
4 thickly sliced potatoes
garlic, chopped
3 pre-cooked lamb Merguez sausages, chopped
a third of a pork fillet, chopped and coated in seasoned flour
saffron, steeped for half an hour in off-the-boil water
4 tomatoes, skinned and 8th’d
some beef stock
some tomato puree
some powdered Spanish pimento
fresh thyme
salt & pepper
olive oil & butter
