sausage making, pt 1 ...masterclass
This weekend I am off to the city to stay with friends, have a day at the cricket (Aus v Windies) and on Saturday have a go at sausage making.
A long held plan and now that S has dug out the snag attachments it is all go. I have a recipe and when ordering the lamb and pork back fat (beware vegetarians, it gets rough from now on) from the local butchers, was invited to have a look at the experts at work (how easy it looks!!).
Appalled by the fact we planned on using collagen skins (sort of natural, but not) I left with two metres of natural skins, clean and ready to go and hints and tips that may make the whole process much easier, and dare I say even successful!
Part 2, hopefully, Saturday's blip.
(And hopefully too a better result for the Aussies at the cricket which has, so far, not been their best summer, aka woeful.)
