No Soggy Bottom

Well, I managed to make this Lemon Meringue Pie yesterday - what a palaver. Took well over two hours and I did make a huge Bake Off style mistake as I whipped the egg whites with the sugar . Anyway, as you can see the family really liked it so it was worth all the effort.
Hats off to Joe Brand and Co for their amazing ones. What next? Probably profiteroles as I have never made those either.
