Broth therapy
SHOULD have tidied flat today, but (1) I don't do "should", (2) I am a skilled and experienced procrastinater (see here). I did also need to do some shopping, and I felt that getting outside would be a beneficial thing for me, especially as it was actually sunny, so off to Tesco it was... Decided that cooking up a huge pan of broth to feed me at work for the week would be a sensible thing, so looked up a couple of recipes for chicken & mushroom soup and adapted them for my taste - eg leaving out the celery and carrots (!!), and adding an Asian theme with coconut milk, kaffir lime leaves, etc... I also added rice to "beef it up" a bit, lots of fresh herbs (thyme, rosemary) and of course my white wine dregs. From my sample taste, I love it!! Cheap, tasty, healthy - and taking my mind off work for a couple of hours was definitely a good thing.
