Madras
Around once a month we get an Indian takeaway and we order by phone, and go for a drink in the close-by pub while we wait. On Tuesday the pub was deserted, boarded up, being renovated, and not before time. I hope they'll renovate their method of service too. It was becoming one of those places where unless the staff recognise you, you can stand at the bar forever. Anyway, walked across to the Indian and the place was also deserted, no pub - no customers. We decided to eat in and got on talking to the owner. He gave me a Madras recipe a while ago and I've cooked many meals from it but never been totally satisfied with the results so went over it all with him again, uninterrupted by customers! More hints and tips and measurements and tonight I we're cooking another! The pic shows the prep, the sauce starting to cook and what the base sauce looks like after an hour of simmering. I'll post an extra if it turns out OK! Wish me luck.
If it's good MrsDB will tell all and sundry that she prepared a magnificent curry, if it goes wrong she'll be telling all her friends how useless I am.
