Melanzane
Struggled last night to find ways to use the veg coming out of garden.
Sliced and salted aubergine, then fried in garlic infused homemade olive oil. Layered in bowl with fresh parsley and stuck in fridge.
Delicious on wood fired bread from Sieci coop. Apparently this bread is excellent to make panzanella - a sort of very cold bread pudding salad for the baking days of summer.
High pressure from the Sahara bringing hotter weather. Forecast 42c in Sicily and 40c in Rome.
