Mushroom Risotto with prosciutto and Beauvale
Tonight's dinner was a Mushroom Risotto with prosciutto and Beauvale cheese.
And it was really very good despite the uninspiring picture.
Beauvale is new Cropwell Bishop and isn't widely available yet. I'd heard about it on BBC radio 4's Food program and managed to get my sister to bring me back some while she was down in London on a course. It's soft and creamy a little like roquefort and if you like blue cheese and can find some it's definitely worth a taste.
Hopefully I'll be down south this year and I can hunt down some more and maybe some Hackney Wild bread to go with.
