Carrot noodle with a nutty sauce

I subscribe to a few raw food blogs. It's uncanny how often recipes posted on them match exactly what I have in the cupboard. This week it is carrots, so I had to try a variation from the Rawmazing repertoire which successfully imitates a Thai influenced peanut sauce.

Coconut, almonds, ginger lime, sesame oil, a bit of garlic and tamari. I added some sweetcorn, broad beans and spring onions. It may look plain-ish but it's a lip-smacking, thumbs up from me. The only other thoing I would add is sprouted mung beans. Next time.
