Dragon's backbone
These terraces were built on steep mountainsides and cover an area of 66 square kilometres. They were first built 600 years ago. The rice terraces, when viewed from above look like dragon ribs, hence their name Dragon's Backbone. There are several villages, but we visited the Ancient Zhuang Village, where we had a meal cooked by one of the families. We had sticky rice and chicken, bother cooked in bamboo tubes, bamboo shoots and mushrooms, a green vegetable and an aubergine dish. We started the meal with could have been rice crispies! You have a bowl of popped rice, add chopped chives, a bit of salt and a sort of oil. You could hear the snap crackle and pop.....
