Fun with fermenting: latest sauerkraut batch
I've dabbled with home-made fermented veg & drink for some time. The results with veggies have always been variable and never as good as the unpasteurised stuff I buy. When I saw that a health food shop was putting on a class, I signed up, hoping to improve.
It was jolly messy, and jolly fun, and my lovely jar of mixed veg. is now gurgling away. If you look closely you can see the bubbles in the liquid at the top. Can't wait to try this.
The lesson for me was: reduce the salt, and generate more juice before storing it.
