Zucchini & Carrot Cake
While I have been doing a few more pages of my Blurb book Doug has been busy in the kitchen.
Like most home gardeners, there is a ridiculous glut of zuchinni's in our garden - we have made soups, used them in salads, fritters, chips, muffins, loaves.....this is a new recipe he found on the web and let me tell you, it is beautifully moist and absolutely delicious. He says he will make another one tomorrow for the freezer.
The recipe.......the orange glaze makes it even more delicious.
