It was a bit...
...like being in The Generation game in our kitchen today, I felt that anyway. Making these we could have been shown how to do it by the expert and then left to see what we could do...only we had no expert and we were making it up as we went along...lol:-)
We had settled on vege-haggis in filo pastry parcels for our starter. Mr R and I have never used filo before...the first two efforts were not good. We re-grouped and re-assigned roles and ended up with these twelve. I'm quite chuffed with these and they tasted great.
Mr R cut the filo in squares. I brushed with butter and layered 3 squares off set to each other. Mr R popped the haggis in and also a wee chunk of goats cheese. I gathered up and made into the wee parcels. Worked a treat.
Quite chuffed with the entire Ne'er Day menu we put on actually, The vege-haggis and goats cheese filo parcel served on a bed of rocket with pomegranate seeds, followed by home made vege-steak pie served with roast potatoes, broccoli and Brussel sprouts followed by Cranachan. It was tasty. Mr R and I enjoyed a bottle of Caurn O'Mhor Shrubbery wine and the kids had their Elderflower fizz.
Enjoyed a quiet Ne'er Day with the family. I ran first thing, a wee 6k to kick start the year and then I went to Church. Came home to vege-bacon on toast and coffee. Then got the Barmy Army moving for a bracing Ne'er Day walk...it was chilly but exhilarating. Then back home to prepare the above meal. With a wee bit of telly thrown in in the evening.
Grateful for days and moments such as these.
