Marshmallows

Last week it was caramels, this week it's marshmallows, and I have the sticky kitchen as evidence.  I haven't made either of these confections for several years but now I have some treats to give as gifts.  Both are worth the effort.  The caramels are lovely soft-ish pillows of delight and you haven't lived until you've melted a couple homemade marshmallows in hot chocolate.  Now, all that's left is to clean the kitchen.  No matter how hard I try there's always a little speck of sticky stuff somewhere that gets spread all over the place.  I guess I should look at it as a good opportunity to give the kitchen a good cleaning as well as work off some of the calories I put on by tasting as I cooked.  See, there's an up-side to everything.
