Chunky sunflower and tomato soup

This is meant to imitate a South American black bean soup - only instead of the beans, there are sunflower seeds.

The sun-dried tomaotoes and chipotle pepper give it a satisfying depth. Other than that there is thyme, lemon juice, coriander and fresh tomatoes.
