Cutting the spirit

A back blip from the beginning of September

That day we had a special event for our Founder's Club members, and here our distillery manager, Peter, was giving a demonstration of how the spirit is cut into three parts in the spirit safe. After the second distillation only a portion is selected for bottling and the strengths at which the distillate is cut varies from distillery to distillery depending on the final character they're looking for.

Founder's Club members seemed to be having a good time. I was asked to do the photography. I took many photos, so it was difficult to choose one. I thought this one showed an interesting part of the whisky making process.
