Vivid beauty of broad beans
Double de-podding was a mysterious term to me until a few years back. The gorgeous greenness of the tender bean lurking under its duller second skin is wonderful. Probably not something you want to do for a whole family as it is labout intensive, but very rewarding if your numbers are few.
I adapted this recipe from a cooked version by Dennis Cotter. Red pepper, red onions, tomatoes, mint, paprika, cumin and garlic, a little oil and a dribble of cashew yoghurt. Very yummy.
