Ribbit

We have quite a crop of escarole this year. It's a vegetable you don't come across very often, and a word I'm pretty sure I remember from Little Lulu comics--the neighborhood grocer was Mr Escarole. Come to find out it's not just a funny word, but something good to eat. We've been looking for recipes that showcase these bright green, slightly bitter leaves. So far we've made pizza (fabulous) and tonight's stew with white beans and sausage, another hit. The internet is a wonderful thing.
