Tilapia

We had tilapia filets for dinner tonight--not one of these whole fish, which I actually don't recall having seen in a market before. These are at our local supermarket, which sold us our filets.  Farming of nile tilapia goes back to ancient Egypt, where the fish were represented by a hieroglyph.  I don't remember eating tilapia prior to perhaps fifteen years ago, but they have certainly become very commonly available since then. As I learned from Wikipedia (see the link above), there are many varieties.
