Surprise salad combo: papaya and lettice

I'm not one for lettice generally; I grew up eating it cooked and can't seem to grow it unblemished by insects & bugs. When I got a large head of leaves in my veg. box, I was forced to face up to it.

I paired it with shaved carrots, diced apples, figs, papaya, + a handful of sprouts. I made a avocado dressing to toss it all in. The papaya and lettice was a happy accident, soft and crisp, mild and creamy. You can't really distinguish between the carrot and papaya in my photo but it made all the difference to the taste. Worth experimenting more with, this summer.
