Calçotada...Valls, Cataluñia

The traditional Catalan method of cooking the calçots,....a type of scallion....... is to grill them over a flaming barbecue.....as in the photo...they are wrapped in paper and served on a terracotta roof tile.....rather than on a plate!
We peeled away the blackened outer layers, and dipped the cooked calçots in a tasty sauce made with tomatoes, almonds, garlic, peppers etc!
Very messy....we were provided with bibs and gloves!,......but delicious!,
