Celebration fare

We finally caught up with our Christmas joint this weekend and for me turkey is welcome at any time.
Yet many years ago we decided that a whole turkey, even a small one was pointless for us whatever the celebration, be it Christmas, Easter or Thanksgiving. But at some stage I cannot resist cold turkey sandwiches.
So that’s when we decided on the routine of simply buying turkey leg, drumstick  and thigh which in effect gave us two separate roasting joints with sufficient turkey meat on both to more than satisfy our needs.
We were away at Christmas this last year, so we opted to freeze the two joints separately and this weekend decided to catch up. With more than enough meat on the thigh part of the leg to provide servings for five, so far, and still at least another three or four, probably for lunchtime tomorrow and the day after.
The thigh joint weighed in at just over a kilo, which is rather larger than our normal weekend joint, and we still have the drumstick, again geared to providing generous portions.
The whole cost of the leg — just £4.50, which to my mind is pretty economical with the likelihood of giving us sufficient servings for at least 12, probably 16.
