Melanzane Parmigiana
I have wanted to make this for a very long time. I love the soft aubergine, the melted cheese and the tangy tomatoes.
However, it all went a bit wrong, as Norovirus meant I spent all of the following night throwing it up. It doesn't taste so good in reverse.
