Do people still eat this?

On an errand for my mum today and had to go into the indoor market.
Walking round the top level gave some interesting views of the food stalls on the ground floor.
Apart from real fishmongers who will give you the time of day as well as a recipe for the fish you`ve just bought {sea bass} and decent butchers, there`s this lady who sells tripe,which made me ask the question.....
