First signs of Spring!
Rained most of today, but just brightened a bit this afternoon so I nipped out into the garden to take this photo.
Lovely to see these little snowdrops peeping through.
As requested the following is the recipe for the
Cheese and Walnut Bites ( blipped 1st Jan.)
140g/5oz strong cheddar, coarsely grated.
100g/4oz unsalted butter, softened
14og/5 oz plain flour
pinch cayenne pepper
1 tsp paprika
1 tbsp thyme leaves, chopped
26 walnut halves
25g/1oz finely grated Parmesan
1. Heat oven to 180C/ fan 160C/ gas 4.
Beat the cheddar and butter together. Gradually sift in the flour, spices,thyme, and pinch of salt, then stir together to a soft dough.
2. Shape the dough into bite-size balls, then push a walnut half into the centre of each one. Close the pastry around the walnut halves. Put onto a baking sheet, sprinkle with Parmesan, then chill for 30 mins. until firm.
( Can be frozen, uncooked, for up to a month)
Bake for 12 - 15 mins until golden brown. Serve warm
