It's traditional innit

Santa pancakes are a tradition in our house on Boxing Day. Actually I might be a bit premature declaring them to be a new tradition as we've only made them for the last two years, but when talk of Christmas began this year the Santa pancakes were one of the first culinary requests: "it's traditional innit". Well let's see if they last longer than the homemade-chocolate-log-I-like-it-much-more-than-Christmas-cake tradition started by AlfeeTee two years ago and promptly forgotten by the following Christmas. I tried to revive it this year but we ran out of time so we're back to Christmas cake (that my bro very generously made) which we will attempt to eat our way through. Anyone got any good ideas for leftover Christmas cake?
