Ta-Dah!

The highlight of my day today was returning home and cooking a meal for P and myself! It was a recipe from my recently purchased River Cottage Veg book.

It is Lentil, Roast Parsnip and Watercress Salad with organic crusty bread. Not only did it turn out to look like the picture in the book, but it tasted good.

Son number one would be proud of me as he has been a vegetarian for 22 years now ( since he was 3! ) and hopefully he will be up to see us soon.

Day one, back at work was pretty much as expected. Really nice to catch up again with friends and colleagues - and even some of the pupils - not so nice to be bombarded with emails and phone calls and paper work, when all you want to do is to get on with the actual task of teaching!

But all in all a pretty good day and a nice dinner with P !!

Here is to trying new (and very healthy) recipes!
