Veg Day

Thursday is veg box day, and therefore the cue for me to realise with horror that, yet again, we haven't used all last weeks veg yet. Thursday is often then a veg-based dinner.

This combined with a rotten cold made veggie curry the obvious choice. This is a Malayan curry recipe which I've done lots. To be authentic it should have coconut milk in, but Mr B is allergic to coconut so I've tried lots of different solutions to get a similar effect. Tonight was a lazy solution: creme fraiche. Not entirely satisfactory.
