Fail safe recipe

I've been trying to sort out decent evening meals for son number one's girlfriend while she's been staying with us. Tricky when I've been working quite late. I decided to give her something other than pasta tonight and stopped off at the supermarket on my way home to buy ingredients. This recipe for courgette and feta filo parcels never lets me down. I've been using it for years and it is surprisingly simple (and the results are tasty). Even my efforts sometimes look a bit like the picture in the recipe book!
