...For we all want some......

Well, not figgy pudding for sure, but maybe a little bit of this.....to finish off Christmas dinner.

Another one of my specialities, a pineapple pudding. It tastes amazing...but it's about 8 gazillion calories per serving.

Melt 2 oz of butter .
Crush a packet of Fox's butter crunch biscuits and stir into the melted butter.
Mix one large egg, 5 oz of icing sugar and 3 1/2 oz of butter into a buttercream.
Drain one can of crushed pineapple.
Whisk 10 oz of double cream then stir in the pineapple.
Put half of the crushed biscuits into the bottom of a dish.
Spread half of the butter cream on top of the biscuits.
Spread all of the pineapple/cream mixture on top.
Spread the rest of the butter cream on top of the cream.
Sprinkle the rest of the biscuit mix on top.
Stand in the fridge overnight.

Bet you can't eat more than one portion!

Home alone on Christmas Eve for the first time in years.

Everything done, presents wrapped, food prepped for tomorrow.

When the Boss gets home we'll have some supper and a drink.

No need to get up early in the morning....the Daughter won't be back until about 11.00. The Boss and I will probably have Buck's Fizz, scrambled eggs and bacon, toast and coffee for breakfast. I'll be cooking.

Just the three of us for lunch.....maybe a quick trip to the local beforehand.

The fun will start when Charlotte gets here for tea!
