This was a great dinner.

I had been thinking about how to cook the eggplant in the fridge and after a bit of a search on the internet I came across a recipe that looked like a possibility - eggplant salad.

Eggplant, some greens (from the garden - go Rodrigo Road), toasted peanuts, coriander, spices and yoghurt on the top. I added tofu because we had some and it seemed like it would be compatible.

With a cucumber salad from a Madhur Jaffrey recipe.
