Beetroot Frenzy

I pulled up my beetroot this morning, and was thrilled to see that they weren't as much of a failure as my carrots!

I am tempted to pickle them, but am wondering whether to do something more exciting with them. Nigel Slater had a lovely beetroot and goats cheese recipe on his programme the other night, and a friend has just given me one with puy lentils and goats cheese.

Decisions decisions! I still have a few more to come I think (hope!), so maybe I'll do a bit of both.
