Pastel de tres leches

Or "Three Milks cake". The Mrs made this Colombian favourite last weekend for our trip to Broadstairs. It was a winner so this weekend it gets made again.

The light sponge gets soaked in three types of milk, which sounds a bit horrible to someone who doesn't like milk too much (me) but this tastes superb :-P
