Experimental Enchaladas

I first had enchiladas in a popular Mexican food chain and loved it. The other night I wasn't sure what I fancied so in the end thought I'd like to give home made enchiladas a go. I got a basic recipe but didn't have some of the ingredients so, well, 'winged it' and it turned out to be the bestest spontaneous kitchen experiment I've ever concocted!

In case you might wish to try this amazingly simple delight, here goes:

Preheat the oven to about 200 degreesC. Fry chicken breast in strips in some light spray oil (or just a small amount of veggie oil) until cooked. Add some onions and peppers, then add a tin of chopped tomatoes along with some garlic (I used paste) and basil- or whatever herbs you like. (We added a few chilli flakes to give it a small kick but not too much for the kids' sake). Microwave a pack of that rice in a sachet -takes 2 minutes (or boil some up ready). Then grate some cheese- I used cheddar since that's what we had in. 
Then assemble, putting a little rice, grated cheese and chicken-sauce mixture in each, making a parcel and putting the parcels into a backing tray. A quarter of the chicken-sauce going over the top with some grated cheese on the top too. I think it was in for about 20 mins, not too long since its all already cooked.

We then had ours just like that but with some Mexican sauces I'd got for the barbecue a couple of weeks ago (guacamole, sour cream and salsa) but it would have been nice as it was with say garlic bread and a side salad. 

I suspect we'll be having it again very soon- every plate was clean by the end of the meal!
