Although I live in England, I am Dutch and grew up in the Netherlands. When I was 20 I moved to Spain and a year later I came to England. My training as a chef was very formal and in French Cuisine. But my mum is from Indonesia and sometimes I like to use either Asian ingredients or Asian cooking techniques and combine them with my classic training. These days my cooking is described as modern British. (But with influences from Holland, Spain, France and Indonesia)
I love being a chef. Each day I get to test the boundaries of my creativity with different flavour and texture combinations, presentation and innovation. You can't beat the feeling I get when a customer leaves satisfied and with a smile on their face.
may 2012 update!!
It's all changed now. I am stopping being a chef. From the first of July 2012 I will be a teacher full time. I am very much looking forward to the new challenges and to training people to do what I love doing myself. I hope I can let people feel my enthusiasm and love for cooking and food and let them feel it themselves! So, 1 more month of cooking for real and then concentrate on making other people into good chefs.
